# How to Prepare:

- Rinse rice under cold water until water runs clear. In a medium saucepan, combine rice, water, and salt. Bring to a boil, then cover and simmer on low for 15 minutes or until water is absorbed. Remove from heat, fluff with a fork, stir in lime juice and cilantro. Cover and set aside.
- Heat olive oil in a large skillet over medium heat. Add onion and cook for 3 minutes until softened. Add garlic and cook for 30 seconds. Add ground beef, breaking it apart with a spatula. Stir in chili powder, cumin, smoked paprika, oregano, salt, and pepper. Cook until beef is browned, about 5-6 minutes. Stir in tomato paste and beef broth. Simmer for 5 minutes until thickened and flavorful. Remove from heat.
- In a small saucepan, combine beans and corn. Heat gently over medium heat for 2-3 minutes until warmed through. Drain any excess liquid if necessary.
- Divide rice among serving bowls. Top each with portions of seasoned beef, beans and corn, tomato, avocado, red onion, lettuce, cheese, sour cream, and salsa. Garnish with lime wedges and fresh cilantro.
