# What You Need:

01 - 1.1 lb lean ground beef
02 - 1 tbsp olive oil
03 - 1 small onion, finely chopped
04 - 2 cloves garlic, minced
05 - 2 tsp chili powder
06 - 1 tsp ground cumin
07 - 1 tsp smoked paprika
08 - 1/2 tsp dried oregano
09 - 1/2 tsp salt
10 - 1/4 tsp black pepper
11 - 2 tbsp tomato paste
12 - 1/3 cup plus 1 tbsp beef broth or water

13 - 1 cup long-grain white rice
14 - 2 cups water
15 - 1/2 tsp salt
16 - 1 tbsp lime juice
17 - 2 tbsp chopped fresh cilantro

18 - 1 can (14 oz) black beans, rinsed and drained
19 - 1/2 tsp ground cumin
20 - 1/4 tsp chili powder

# How to Prepare:

01 - Rinse the rice under cold water until water runs clear. In a medium saucepan, bring water to a boil. Add rice and salt, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork, stir in lime juice and chopped cilantro. Keep warm.
02 - In a small saucepan, combine black beans, cumin, chili powder, and a pinch of salt. Heat over medium, stirring occasionally, until warmed through for about 5 minutes. Set aside.
03 - Heat olive oil in a large skillet over medium-high heat. Add chopped onion and cook until softened for 2 to 3 minutes. Add garlic, cook for 30 seconds. Add ground beef, breaking it up with a spoon. Cook until browned and cooked through for 5 to 6 minutes. Drain excess fat if needed.
04 - Add chili powder, cumin, smoked paprika, oregano, salt, and pepper to the beef. Stir in tomato paste and beef broth. Simmer for 3 to 4 minutes until thickened. Taste and adjust seasoning as needed.
05 - Divide cooked rice among 4 bowls. Top each with black beans, seasoned beef, and your choice of toppings: avocado, cherry tomatoes, lettuce, cheddar cheese, sour cream, red onion, and cilantro. Serve with lime wedges.
