- Preheat oven to 400°F.
- Heat olive oil in a skillet over medium heat. Add onion and cook until softened, about 2 minutes.
- Add minced garlic and cook for 30 seconds until fragrant.
- Add ground beef and cook, breaking up with a spoon, until browned and no longer pink, about 5 minutes.
- Stir in cumin, chili powder, smoked paprika, oregano, salt, and black pepper. Cook for 1 minute until aromatic.
- Add tomato paste and water. Mix thoroughly and simmer for 3 to 4 minutes until thickened. Remove from heat.
- Arrange half of the tortilla chips on a large ovenproof platter. Top with half the beef mixture and half the shredded cheeses.
- Top with remaining chips, beef, and cheeses evenly.
- Bake in the preheated oven for 8 to 10 minutes until cheese is fully melted and bubbly.
- Remove from oven. Evenly scatter cherry tomatoes, black beans, red onion, jalapeños, avocado, olives, and green onions over the nachos.
- Dollop sour cream, guacamole, and salsa over the top. Sprinkle freshly chopped cilantro.
- Serve immediately, accompanied by lime wedges.
