Game Day Sausage Rolls (Print Version)

Flaky pastry encases juicy, spiced halal sausage, ideal for sharing at game day events.

# What You Need:

→ Filling

01 - 1.1 pounds halal chicken or beef sausages, casings removed
02 - 1 small onion, finely diced
03 - 2 garlic cloves, minced
04 - 1 teaspoon smoked paprika
05 - 1 teaspoon dried oregano
06 - ½ teaspoon ground black pepper
07 - ½ teaspoon salt

→ Pastry

08 - 2 sheets ready-rolled puff pastry (halal-friendly, approximately 11 ounces total)
09 - 1 egg, beaten (for egg wash; or 2 tablespoons milk for egg-free option)

→ To Finish

10 - 1 tablespoon sesame seeds (optional)

# How to Prepare:

01 - Preheat oven to 400°F. Line a baking tray with parchment paper.
02 - In a large bowl, combine sausage meat, onion, garlic, paprika, oregano, pepper, and salt. Mix until evenly blended.
03 - Unroll the pastry sheets on a lightly floured surface. Cut each sheet in half lengthwise to create 4 long rectangles.
04 - Divide the sausage mixture into 4 equal portions. Shape each into a long log and place along one long edge of each pastry strip.
05 - Tightly roll the pastry over the filling, sealing the edge with a little water. Place seam-side down and cut each roll into 4 pieces (16 rolls total).
06 - Arrange rolls on the prepared tray. Brush tops with beaten egg (or milk for egg-free). Sprinkle with sesame seeds if desired.
07 - Bake for 22–25 minutes or until golden and cooked through. Serve warm or at room temperature.

# Expert Advice:

01 -
  • The contrast between shatteringly crisp pastry and juicy, spiced filling is absolutely addictive
  • You can prep everything ahead and bake them fresh when guests arrive
02 -
  • Cold pastry is non negotiable here, if it gets warm the butter melts and you lose those flaky layers
  • Sealing the edge with water actually works better than egg wash for preventing openings during baking
03 -
  • Work quickly with the pastry to keep it cold, and if it starts feeling soft pop it in the fridge for 10 minutes
  • The seam side down placement ensures they do not unroll while baking and gives you an even shape
