Green Cucumber Herb Cheese (Print Version)

Fresh cucumber and creamy herb cheese layers create a light, refreshing snack or lunch option.

# What You Need:

→ Herb Cheese Spread

01 - 7 oz cream cheese, softened
02 - 2 tbsp fresh chives, finely chopped
03 - 1 tbsp fresh dill, finely chopped
04 - 1 tbsp fresh parsley, finely chopped
05 - 1 tsp lemon zest
06 - 1/4 tsp garlic powder
07 - Salt and freshly ground black pepper, to taste

→ Sandwiches

08 - 1 large English cucumber, thinly sliced
09 - 12 slices soft white or whole wheat sandwich bread, crusts removed
10 - 2 tbsp unsalted butter, softened (optional, for bread)

# How to Prepare:

01 - In a medium bowl, combine the cream cheese, chives, dill, parsley, lemon zest, garlic powder, salt, and pepper. Mix until smooth and well blended.
02 - If desired, lightly butter one side of each bread slice to prevent sogginess.
03 - Spread a generous layer of the herb cheese mixture on each slice of bread. Arrange cucumber slices evenly over half of the bread slices. Top with the remaining bread slices, cheese side down, to form sandwiches.
04 - Gently press together and trim crusts if not already removed. Slice each sandwich into quarters or fingers. Serve immediately, or cover with a damp paper towel and refrigerate until ready to serve.
