02 - 1 scoop vanilla protein powder, whey or plant-based

03 - 1/2 cup fresh blueberries
04 - Zest of 1 lemon
05 - 1 tablespoon fresh lemon juice

06 - 1 cup rolled oats, gluten-free if needed
07 - 2 tablespoons honey or maple syrup
08 - 1/2 teaspoon vanilla extract
09 - Pinch of salt

10 - 1/4 cup shredded unsweetened coconut

# How to Prepare:

01 - Combine cottage cheese, protein powder, lemon zest, lemon juice, honey, vanilla extract, and salt in a food processor. Blend until completely smooth and creamy, scraping down sides as needed.
02 - Add rolled oats to the processor and pulse several times until evenly distributed. The mixture should begin to hold together when pressed but still retain some texture from the oats.
03 - Transfer mixture to a mixing bowl. Gently fold in fresh blueberries using a spatula, taking care not to crush or mash the fruit.
04 - Refrigerate the mixture for 10 minutes to firm slightly. This step makes shaping the bites easier and prevents them from becoming too sticky.
05 - Lightly dampen hands with water. Roll the chilled mixture into 16 evenly sized balls, using approximately 1 tablespoon per bite.
06 - If using shredded coconut, roll each completed bite in the coating until evenly covered on all sides.
07 - Place finished bites in an airtight container. Refrigerate for up to 4 days or freeze for up to 1 month. Thaw frozen bites in the refrigerator before serving.
