→ Wraps & Assembly

17 - 4 large flour tortillas
18 - 1 cup iceberg lettuce, shredded
19 - Extra lime wedges, for serving

# How to Prepare:

01 - Combine olive oil, chili powder, smoked paprika, ground cumin, salt, and black pepper in a bowl. Coat chicken breasts evenly with the marinade and allow to stand for 10 minutes.
02 - Grill or pan-sear marinated chicken over medium-high heat for 5 to 6 minutes per side until thoroughly cooked. Remove from heat, rest briefly, then slice thinly across the grain.
03 - In a mixing bowl, combine corn kernels, chopped red onion, diced jalapeño, chopped cilantro, mayonnaise, sour cream, garlic powder, lime juice, and crumbled Cotija cheese. Mix until fully incorporated.
04 - Heat flour tortillas in a dry skillet or in the microwave for 10 to 15 seconds until pliable.
05 - Place a tortilla on a clean surface. Arrange a layer of shredded lettuce, sliced grilled chicken, and a generous portion of the street corn mixture onto each tortilla.
06 - Roll each tortilla tightly into a wrap. Slice in half if desired. Serve with additional lime wedges.

# Expert Advice:

01 -
  • The creamy, zesty corn filling is the kind of surprise you keep going back for one bite at a time.
  • It comes together in thirty minutes and still manages to feel like a treat, which is a game changer on busy nights.
02 -
  • If you skip letting the marinated chicken rest after cooking, it turns out dry and loses that irresistible tenderness.
  • Switching out Cotija for feta was a revelation once, and nobody even noticed the swap until I confessed.
03 -
  • Warming the tortillas just before assembly prevents them from tearing and makes rolling easy.
  • Zest a little lime over the top at the end for a final layer of fragrance that everyone will notice, even before the first bite.
